{"id":412,"date":"2019-04-08T22:16:17","date_gmt":"2019-04-09T02:16:17","guid":{"rendered":"http:\/\/hungrychooi.com\/?p=412"},"modified":"2019-04-08T22:17:57","modified_gmt":"2019-04-09T02:17:57","slug":"chicken-parmagiana","status":"publish","type":"post","link":"https:\/\/hungrychooi.com\/index.php\/2019\/04\/08\/chicken-parmagiana\/","title":{"rendered":"Chicken Parmigiana"},"content":{"rendered":"<p>Delicious, inexpensive, and simple &#8211; served with a salad!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>INGREDIENTS<\/strong><\/p>\n<ul>\n<li>3 or 4 (about 8 oz each) chicken breasts, sliced in half lengthwise<\/li>\n<li>3\/4 cup seasoned breadcrumbs (or plain, mixed with 1Tbs oregano, 1 tsp dried basil, &amp; 1\/2 tsp thyme &amp; garlic powder)<\/li>\n<li>1 egg<\/li>\n<li>1\/2 cup water<\/li>\n<li>1\/4 cup grated Parmesan cheese<\/li>\n<li>3\/4 cup shredded or 1 &#8216;log&#8217; of mozzarella cheese<\/li>\n<li>1 small jar Marinara<\/li>\n<li>cooking spray<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>DIRECTIONS<\/strong><\/p>\n<ol>\n<li>Preheat oven to 450\u00b0F. Spray a large baking sheet lightly with spray.<\/li>\n<li>Combine breadcrumbs (and herbs) and parmesan cheese in a bowl.<\/li>\n<li>Whisk water and egg together in a bowl until smooth.<\/li>\n<li>Dip chicken in egg mixture, then dip into breadcrumb mixture. Repeat back in egg and breadcrumb mixture for double coating.
