You can&#8217;t taste the coconut oil after its baked.<\/p>\n<p>Guilty-free banana bread!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-42\" src=\"http:\/\/hungrychooi.com\/wordpress\/wp-content\/uploads\/2016\/09\/IMG_1911-300x225.jpg\" alt=\"img_1911\" width=\"527\" height=\"395\" \/><\/p>\n<p><b>Healthy Banana Bread<\/b><\/p>\n<p><span style=\"font-weight: 400;\">Prep time: \u00a010 mins<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Cook time: \u00a055 mins<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Total time: \u00a01 hour 5 mins<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Serves: 1 loaf<\/span><\/p>\n<p><b>INGREDIENTS<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u2153 cup melted coconut oil\u00a0<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd cup honey or maple syrup<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 eggs<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup mashed ripe bananas (about 2\u00bd medium or 2 large bananas)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bc cup milk of choice or water<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 teaspoon baking soda<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 teaspoon vanilla extract<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd teaspoon salt<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">\u00bd teaspoon ground cinnamon, plus more to swirl on top<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\u00be cups\u00a0<\/span><span style=\"font-weight: 400;\">whole wheat flour<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Totally optional: \u00bd cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices&#8230;<\/span><\/li>\n<\/ul>\n<p><b>INSTRUCTIONS<\/b><\/p>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9\u00d75-inch loaf pan.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In a large bowl, beat the oil and honey together together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 10 seconds in the microwave.)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you&#8217;re adding any additional mix-ins, gently fold them in now.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. If you&#8217;d like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean (typically, if I haven&#8217;t added any mix-ins, my bread is done at 55 minutes; if I have added mix-ins, it needs closer to 60 minutes). Let the bread cool in the loaf pan for 10 minutes, then transfer it to a wire rack to cool for 20 minutes before slicing.<\/span><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><i><\/i><span style=\"font-weight: 400;\">STORAGE SUGGESTIONS:<\/span><span style=\"font-weight: 400;\"> This bread is moist, so it will keep for just two or three days at room temperature. Store it in the refrigerator for five to seven days, or in the freezer for up to three months or so.
