{"id":395,"date":"2018-12-08T16:47:33","date_gmt":"2018-12-08T20:47:33","guid":{"rendered":"http:\/\/hungrychooi.com\/?p=395"},"modified":"2018-12-08T16:48:46","modified_gmt":"2018-12-08T20:48:46","slug":"salmon-bowl-with-coconut-lemongrass-lime-sauce","status":"publish","type":"post","link":"https:\/\/hungrychooi.com\/index.php\/2018\/12\/08\/salmon-bowl-with-coconut-lemongrass-lime-sauce\/","title":{"rendered":"Salmon Bowl with Coconut Lemongrass Lime Sauce"},"content":{"rendered":"<p>This is really simple, healthy dish but we would like to make with lots more sauce next time!<\/p>\n<p><strong>Ingredients<\/strong><br \/>\n4 salmon fillets , 180g\/6oz each preferably skinless<br \/>\nSalt and pepper<br \/>\n2 tbsp oil , separated<br \/>\n4 garlic cloves , finely grated<br \/>\n4 tsp ginger , finely grated<br \/>\n2 lemongrass, peeled, finely grated<br \/>\n2 tbsp brown sugar<br \/>\n2 tsp chilli garlic paste, adjust to taste<br \/>\n2 x cans 400 g\/14oz coconut milk<br \/>\n2 tbsp fish sauce<br \/>\n4 tsp lime zest (2 lime)<br \/>\nLime juice , to taste<\/p>\n<p><strong>Garnish\/serving:<\/strong><br \/>\nFresh coriander\/cilantro leaves, finely chopped (recommended)<br \/>\nVermicelli noodles , soaked per packet, or rice<br \/>\nSteamed Asian greens<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Sprinkle both sides of salmon with salt and pepper.<\/li>\n<li>Heat 1 tbsp oil in pan over medium high heat. Add salmon, skin side up, and sear for just 1 1\/2 minutes until golden.<\/li>\n<li>Turn salmon and cook the other side just for 1 minute, then remove onto a plate (should still be raw inside).<\/li>\n<li>Turn heat down to medium low and allow skillet to cool.<\/li>\n<li>Heat remaining 1 tbsp oil. Add garlic, ginger and lemongrass. Cook until garlic is light golden ~ 1 minute.<\/li>\n<li>Add sugar and cook for 20 seconds until it becomes a caramel. Then stir in chilli paste.<\/li>\n<li>Add coconut milk and stir, scraping the bottom of the skillet to dissolve any bits stuck on the base into the sauce.<\/li>\n<li>Stir in fish sauce, increase heat to medium. Simmer for 2 minutes.<\/li>\n<li>Place salmon into the sauce, lower heat and simmer gently for 4 minutes, or until just cooked.<\/li>\n<li>Remove salmon, stir in lime zest and juice to taste. Adjust salt to taste with fish sauce.<\/li>\n<li>Serve salmon over noodles or rice.
