{"id":352,"date":"2018-05-27T20:41:48","date_gmt":"2018-05-28T00:41:48","guid":{"rendered":"http:\/\/hungrychooi.com\/?p=352"},"modified":"2018-05-27T20:41:48","modified_gmt":"2018-05-28T00:41:48","slug":"lemongrass-chicken","status":"publish","type":"post","link":"https:\/\/hungrychooi.com\/index.php\/2018\/05\/27\/lemongrass-chicken\/","title":{"rendered":"Lemongrass Chicken"},"content":{"rendered":"<h5>Ingredients:<\/h5>\n<ul>\n<li>2 tablespoons fish sauce<\/li>\n<li>3 garlic cloves, crushed<\/li>\n<li>1 tablespoon curry powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>2 tablespoons + 1 1\/2 teaspoons sugar<\/li>\n<li>1 1\/2 pounds boneless, skinless chicken breast\/thigh, cut into 1 1\/2-inch pieces<\/li>\n<li>3 tablespoons water<\/li>\n<li>3 tablespoons cooking oil<\/li>\n<li>2-4 fresh lemongrass stalks, tender inner white bulbs only, minced<\/li>\n<li>1 large shallot, thinly sliced<\/li>\n<\/ul>\n<h5>Directions:<\/h5>\n<ol>\n<li>In a bowl, combine the fish sauce, garlic, curry powder, salt, and 1 1\/2 teaspoons of the sugar. Add the chicken meat to coat.<\/li>\n<li>In a wok, mix the remaining 2 tablespoons of sugar with 1 tablespoon of the water and cook over high heat, stirring until the sugar is dissolved. Cook without stirring until a deep amber caramel forms. Remove from the heat and stir in the remaining 2 tablespoons of water. Transfer to a bowl (important: add water while still in wok!).<\/li>\n<li>Heat wok over high heat. Add the oil and heat until shimmering. Add the lemongrass and shallot and stir-fry until fragrant.
