{"id":290,"date":"2017-08-25T20:55:35","date_gmt":"2017-08-26T00:55:35","guid":{"rendered":"http:\/\/hungrychooi.com\/?p=290"},"modified":"2017-08-25T20:56:00","modified_gmt":"2017-08-26T00:56:00","slug":"290","status":"publish","type":"post","link":"https:\/\/hungrychooi.com\/index.php\/2017\/08\/25\/290\/","title":{"rendered":"Thai Red Curry with Chicken"},"content":{"rendered":"<p>Ingredients<\/p>\n<ul>\n<li class=\"ingredient\">8 chicken thighs<\/li>\n<li class=\"ingredient\">Salt and freshly ground black pepper, to taste<\/li>\n<li class=\"ingredient\">2 tablespoons unsalted butter<\/li>\n<li class=\"ingredient\">2 (14 ounce) cans light coconut milk<\/li>\n<li class=\"ingredient\">1 tablespoon cornstarch<\/li>\n<li class=\"ingredient\">2 cloves garlic, minced<\/li>\n<li class=\"ingredient\">1 tablespoon freshly grated ginger<\/li>\n<li class=\"ingredient\">2 tablespoons red curry paste<\/li>\n<li class=\"ingredient\">Juice of 1 lime<\/li>\n<li class=\"ingredient\">1 tablespoon fish sauce<\/li>\n<li class=\"ingredient\">1 teaspoon sugar<\/li>\n<li class=\"ingredient\">8 ounces sugar snap peas<\/li>\n<li class=\"ingredient\">1\u00a0Thai chili pepper, thinly sliced<\/li>\n<li class=\"ingredient\">2 tablespoons chopped fresh cilantro leaves<\/li>\n<\/ul>\n<p>Directions<\/p>\n<ol>\n<li>Preheat oven to 400 degrees F.<\/li>\n<li>Season chicken with salt and pepper, to taste.<\/li>\n<li>Melt butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; drain excess fat and set aside.<\/li>\n<li>In a medium bowl, whisk together coconut milk and cornstarch; set aside.<\/li>\n<li>Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1-2 minutes. Stir in ginger until fragrant, about 1 minute.<\/li>\n<li>Whisk in curry paste until well combined, about 1 minute. Gradually whisk in coconut milk mixture, and cook, whisking constantly, until incorporated and slightly thickened, about 1-2 minutes. Stir in lime juice, fish sauce, sugar and sugar snap peas.<\/li>\n<li>Return chicken to the skillet.\u00a0Place into oven and roast until completely cooked through, reaching an internal temperature of 165 degrees F, about 25-30 minutes.<\/li>\n<li>Garnish with chili pepper and cilantro.
