{"id":259,"date":"2017-05-17T21:53:27","date_gmt":"2017-05-18T01:53:27","guid":{"rendered":"http:\/\/hungrychooi.com\/?p=259"},"modified":"2017-05-17T21:53:27","modified_gmt":"2017-05-18T01:53:27","slug":"chinese-braised-chicken-mushrooms","status":"publish","type":"post","link":"https:\/\/hungrychooi.com\/index.php\/2017\/05\/17\/chinese-braised-chicken-mushrooms\/","title":{"rendered":"Chinese Braised Chicken &#038; Mushrooms"},"content":{"rendered":"<p>This is one of my go-to dishes for protein to eat with rice. \u00a0It keeps well and I could eat it every day &#8211; though Aaron doesn&#8217;t like it!<\/p>\n<p>&nbsp;<\/p>\n<div class=\"ERSIngredients\">\n<div class=\"ERSIngredientsHeader ERSHeading\"><strong>Ingredients<\/strong><\/div>\n<ul>\n<li class=\"ERSIngredientsHeader ERSHeading\">2 tablespoons oil<\/li>\n<li class=\"ingredient\">3 slices ginger, julienned<\/li>\n<li class=\"ingredient\">1 \u00bc lbs chicken drumettes<\/li>\n<li class=\"ingredient\">10-15 dried shiitake mushrooms, rinsed and soaked in 2 cups of warm water until soft (reserve soaking liquid)<\/li>\n<li class=\"ingredient\">\u00be cup dried wood ear mushrooms, rinsed and soaked<\/li>\n<li class=\"ingredient\">\u00bc cup cooking wine<\/li>\n<li class=\"ingredient\">1 \u00bd tablespoons soy sauce<\/li>\n<li class=\"ingredient\">\u00bd teaspoon of dark soy sauce<\/li>\n<li class=\"ingredient\">1 \u2013 1 \u00bc cups mushroom soaking liquid<\/li>\n<li class=\"ingredient\">1 scallion, sliced<\/li>\n<\/ul>\n<div class=\"ERSClear\"><\/div>\n<\/div>\n<div class=\"ERSInstructions\">\n<div class=\"ERSInstructionsHeader ERSHeading\"><strong>Instructions<\/strong><\/div>\n<ol>\n<li class=\"instruction\">Heat the 2 tablespoons oil in your wok over medium heat. Add the ginger and let it cook for about a minute until fragrant. Then turn up the heat to high and add the chicken. Keep stirring until the chicken is browned, and add the soaked shiitake and wood ear mushrooms. Keep stirring for another couple minutes.<\/li>\n<li class=\"instruction\">Then add cooking wine, sugar, soy sauce, and dark soy sauce; mix everything well. Lastly, add 1 to 1 \u00bc cup of the water you used to soak the mushrooms. Bring the liquid to a boil, cover the wok, and simmer over low heat for about 45 minutes, or until the sauce is thick and gooey. Make sure to stir occasionally, and remember to keep the heat low and add more water if you like a lot of sauce.<\/li>\n<li class=\"instruction\">Finally, stir in the scallions until they&#8217;re wilted.
