It turned out much better than I thought it would. Nicely balanced, not too creamy, very flavorful.<\/div>\n<div class=\"ERSIngredientsHeader ERSHeading\"><\/div>\n<div class=\"ERSIngredientsHeader ERSHeading\"><\/div>\n<div class=\"ERSIngredientsHeader ERSHeading\"><strong> Ingredients<\/strong><\/div>\n<ul>\n<li class=\"ingredient\">1lb\u00a0orecchiette pasta<\/li>\n<li class=\"ingredient\">2 cartons\u00a0Swiss Brown Mushrooms<\/li>\n<li class=\"ingredient\">3-4 tbsp unsalted butter, separated<\/li>\n<li class=\"ingredient\">2 tbsp olive oil<\/li>\n<li class=\"ingredient\">3 garlic cloves, minced<\/li>\n<li class=\"ingredient\">1 onion, finely chopped<\/li>\n<li class=\"ingredient\">3\/4 cup freshly grated parmesan cheese (or \u00bc cup store bought grated)<\/li>\n<\/ul>\n<div class=\"ERSSectionHead\">To serve<\/div>\n<ul>\n<li class=\"ingredient\">Parsley, finely chopped<\/li>\n<li class=\"ingredient\">Parmesan cheese, grated<\/li>\n<\/ul>\n<div class=\"ERSClear\"><\/div>\n<\/div>\n<p>&nbsp;<\/p>\n<p><strong>Directions<\/strong><\/p>\n<p>Pasta<\/p>\n<div class=\"ERSInstructions\">\n<ol>\n<li class=\"instruction\">Bring a large pot of salted water to the boil. Add the pasta into the pot when you start cooking the mushrooms.<\/li>\n<li class=\"instruction\">Cook pasta per packet instructions minus 1 minute. RESERVE 1 mugful of pasta cooking liquid, then drain pasta.<\/li>\n<\/ol>\n<div class=\"ERSSectionHead\">Mushrooms<\/div>\n<ol>\n<li class=\"instruction\">Meanwhile, slice mushrooms into 4mm thick slices.<\/li>\n<li class=\"instruction\">Melt 2 tbsp of butter and oil in a large skillet over medium heat.<\/li>\n<li class=\"instruction\">Add garlic and onions. Cook for 1 minute.<\/li>\n<li class=\"instruction\">Turn heat up to high. Add mushrooms and cook until water has leeched then evaporated, and the mushrooms start to turn golden &#8211; around 5 minutes.<\/li>\n<li class=\"instruction\">Add remaining 1\u00a0&#8211; 2 tbsp butter. Stir until melted.<\/li>\n<li class=\"instruction\">Turn heat down to medium high. Add pasta, about \u00be cup of reserved pasta water and parmesan. Toss gently or until water reduces and thickens into a saucy glaze that coats the pasta.
