{"id":144,"date":"2016-09-09T23:05:41","date_gmt":"2016-09-10T03:05:41","guid":{"rendered":"http:\/\/hungrychooi.com\/?p=144"},"modified":"2016-09-09T23:05:41","modified_gmt":"2016-09-10T03:05:41","slug":"vegan-quinoa-sweet-potato-chili","status":"publish","type":"post","link":"https:\/\/hungrychooi.com\/index.php\/2016\/09\/09\/vegan-quinoa-sweet-potato-chili\/","title":{"rendered":"Vegan Quinoa &#038; Sweet Potato Chili"},"content":{"rendered":"<p><i><span style=\"font-weight: 400;\">makes 6 hearty bowls of chili<\/span><\/i><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1 \u00a0(29 oz) can black beans, rinsed and drained<\/span><\/li>\n<li>1\u00a0(6 oz) can tomato paste<\/li>\n<li>32 oz vegetable stock<\/li>\n<li>1 onion, chopped<\/li>\n<li>5 cloves garlic, minced<\/li>\n<li>1 tablespoon chili powder<\/li>\n<li>1 tablespoon cumin<\/li>\n<li>1 teaspoon oregano<\/li>\n<li>1 tablespoon olive oil<\/li>\n<li>1 sweet potato, peeled and cut into bite sized chunks<\/li>\n<li>1 cup dry quinoa<\/li>\n<li>salt and pepper to taste<\/li>\n<li>avocado, cilantro for garnish \u00a0(optional)<\/li>\n<\/ul>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li><span style=\"font-weight: 400;\">Heat the oil in a large heavy soup pot over medium low heat. Add onions, and cook until soft and they start to turn brown (about 10 minutes). <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Add the garlic, and cook for about 2 minutes. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Add the tomato paste, chili powder, cumin, and oregano and cook for about 2 minutes, stirring constantly. <\/span><\/li>\n<li><span style=\"font-weight: 400;\">Add the beans, stock, and potatoes, and season with salt and pepper .
