Hainanese Chicken Rice

Chicken ginger rice

Ingredients:

  • Washed white rice (420gm)
  • Chicken stock (480gm)
  • Shallot, finely chopped (8)
  • Garlic, finely chopped (4 cloves)
  • Young ginger, finely chopped (50gm)
  • Pandan leaves (2 stalks)
  • Butter (50gm)
  • Sesame oil (as needed)

Directions:

  1. Wash the white rice properly and set aside.
  2. Saute the shallot, garlic, young ginger ingredients until fragrant.
  3. Add the white rice in along with the pandan leaves, stir evenly.
  4. Cook the rice in ricecooker around 20-25 mins.
  5. After it’s finished, add in sesame oil and stir.
  6. Ginger rice is ready to serve!

Poached chicken

Ingredients:

  • Chicken
  • Cilantro (a few whole stalks)
  • Spring onion
  • Ginger (just chop into large pieces)
  • Cooking wine

Directions:

  1. Prepare a pot of boiling water with the cilantro, spring onion, ginger and cooking wine.
  2. After the water is boiling, add in the chicken and bring to the boil again.
  3. Turn off the heat once it returns to boil, and put the lid on, and leave for 45 mins (depends on size of chicken).
  4. Once the chicken is done (can test with a chopstick), soak in ice water to cool down the chicken.
  5. Strain out the chicken and glaze a thin layer of sesame oil over the skin before serving.

Chilli Sauce

Ingredients:

  • Red chili (75gm)
  • Garlic, peeled (38gm)
  • Young ginger (38gm)
  • White vinegar (75gm)
  • Sugar (38gm)
  • Ketchup (63gm)
  • Chili sauce (43gm)
  • Salt (1/2 tsp)
  • Sesame oil (1 tbsp)

Directions:

  1. Cut the red chili, garlic, and young ginger into small size
  2. Put in a small blender along with all the other ingredients (except sesame oil), mix all the ingredients together and blend into paste form.
  3. Add in the sesame oil, then it’s ready to serve!

Soy sauce

Ingredients:

  • Soy sauce (150gm)
  • Sugar (95gm)
  • Maggi seasoning (1/2 tbsp)
  • Fish sauce or dashi powder (12gm)
  • Water (200gm)
  • Cilantro and spring onion (as needed)

Directions:

  1. Add in the soy sauce, sugar, Maggi seasoning, fish sauce and water in a small pot and bring ig to boil.
  2. Simmer for 5-10 minutes.
  3. Garnish with cilantro and spring onion if desired.
  4. Serve!

Topping

  • Tomato, sliced
  • Cucumber, sliced
