Yee Sang (Prosperity Salad)

I grew up with this dish at Chinese New Year gatherins. I tried making it for the first time this year, and it turned out really good!

Ingredients

  • 8 oz. best-quality salmon –  thinly sliced
  • 10 square wonton wrappers -, cut into ½”-thick strips then fried
  • 1 small jicama or 1/2 medium one – peeled and julienne
  • 1 large cucumber – peeled and julienne
  • 2 grapefruit or 1 pomelo – peeled, segmented
  • 2-3 carrots – peeled and julienne
  • 1 small daikon – peel and julienne
  • ½ cup cilantro leaves
  • Shredded lettuce
  • Peanuts
  • Sesame seeds

Dressing

  • 1/2cup plum sauce
  • 4 Tbsp. soy sauce
  • 2 tsp. Chinese five-spice powder
  • 2 tsp. sesame oil
  • 4 tbsp honey
  • 2 tbsp lime juice

Arrange all vegetables and salad components nicely on a serving plate. Right before serving, pour on the dressing, then mix with chopsticks altogether!
