Chicken Parmigiana

Delicious, inexpensive, and simple – served with a salad!

 

INGREDIENTS

  • 3 or 4 (about 8 oz each) chicken breasts, sliced in half lengthwise
  • 3/4 cup seasoned breadcrumbs (or plain, mixed with 1Tbs oregano, 1 tsp dried basil, & 1/2 tsp thyme & garlic powder)
  • 1 egg
  • 1/2 cup water
  • 1/4 cup grated Parmesan cheese
  • 3/4 cup shredded or 1 ‘log’ of mozzarella cheese
  • 1 small jar Marinara
  • cooking spray

 

DIRECTIONS

  1. Preheat oven to 450°F. Spray a large baking sheet lightly with spray.
  2. Combine breadcrumbs (and herbs) and parmesan cheese in a bowl.
  3. Whisk water and egg together in a bowl until smooth.
  4. Dip chicken in egg mixture, then dip into breadcrumb mixture. Repeat back in egg and breadcrumb mixture for double coating. Place on baking sheet and repeat with the remaining chicken.
  5. Lightly spray a little more oil on top and bake in the oven for 25 minutes.
  6. Remove from oven, spoon Marinara sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese.
  7. Bake 5 more minutes or until cheese is melted.
