Delicious, inexpensive, and simple – served with a salad!
INGREDIENTS
- 3 or 4 (about 8 oz each) chicken breasts, sliced in half lengthwise
- 3/4 cup seasoned breadcrumbs (or plain, mixed with 1Tbs oregano, 1 tsp dried basil, & 1/2 tsp thyme & garlic powder)
- 1 egg
- 1/2 cup water
- 1/4 cup grated Parmesan cheese
- 3/4 cup shredded or 1 ‘log’ of mozzarella cheese
- 1 small jar Marinara
- cooking spray
DIRECTIONS
- Preheat oven to 450°F. Spray a large baking sheet lightly with spray.
- Combine breadcrumbs (and herbs) and parmesan cheese in a bowl.
- Whisk water and egg together in a bowl until smooth.
- Dip chicken in egg mixture, then dip into breadcrumb mixture. Repeat back in egg and breadcrumb mixture for double coating. Place on baking sheet and repeat with the remaining chicken.
- Lightly spray a little more oil on top and bake in the oven for 25 minutes.
- Remove from oven, spoon Marinara sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese.
- Bake 5 more minutes or until cheese is melted.
