Easy Spaghetti Bolognese

 

I could eat this every day! Mum’s recipe (loosely modified) – this freezes well too.

 

Ingredients

  • 1 pack spaghetti/spiral pasta
  • 1 can peeled tomatoes (whole)
  • 1 large pasta sauce jar (spicy is good!)
  • 1 large onion, sliced into wedges
  • 6 cloves garlic, crushed
  • lots of white mushrooms, sliced
  • 3 zucchini, sliced
  • ~lb minced meat (we use either turkey or pea protein from Wholefoods frozen section)
  • soy sauce
  • Italian seasoning

Instructions

  1. Heat olive oil on medium high
  2. Add onion, cook for a couple minutes, add garlic until fragrant (not browned)
  3. Add meat and pour a bit of soy sauce over it. Sprinkle some Italian herbs. Break up meat and cook until browned
  4. Add canned peeled tomatoes (can break them up) and pasta sauce jar. Stir
  5. Bring to boil, then simmer for half hour
  6. Add mushrooms and zucchini, stir
  7. Continue simmering until sauce is thickened, maybe hour total
  8. Add cooked spaghetti
  9. Top with LOTS of shredded mozarella and parmesan cheese
