Slowcooker Maple Almond Granola

Got this recipe from my sister-in-law, after trying it on our family getaway vacation in Vermont. Better than any store-bought granola I’ve ever had! Serve with yoghurt and top with fresh fruit!

 

Ingredients

  • 5 cups rolled oats
  • 1 cup sliced almonds
  • 3/4 cup unsweetened shredded coconut
  • 1/2 cup chopped dates
  • 1/2 cup sesame seeds
  • 2/3 cup maple syrup
  • 1/4 cup corn or mild-tasting oil
  • 1/4 teaspoon ground cinnamon
  • pinch of salt
  • 3/4 dried cranberries (or any other dried fruit)

 

Directions

  1. Combine all ingredients in a lightly oiled 4-quart slowcooker and stir to combine. Cook on High for 1 1/2 hours, uncovered, stirring occasionally.
  2. Reduce the heat to Low and cook, uncovered, for 2 hours, stirring occasionally, until the mixture is crisp and dry. Add cranberries (or other dried fruit)
  3. Spread the granola on a baking sheet to cool completely. Store in airtight container.
